Democrat apples are now available \"?\"<\/span>\"?\"<\/span>\"?\"<\/span>\"?\"<\/span><\/div>\n
They are a Heritage variety, with a dark red skin and are full of flavour – delicious for both eating and cooking.<\/div>\n<\/div>\n

Granny Smith, Braeburn, Splendour and Red Delicious are still available – Red Delicious will finish in a few days time \"?\"<\/span>\"?\"<\/span><\/div>\n<\/div>\n

One of my favourite recipes is Apple Shortcake \u2013 here is the simple recipe my Mum and I use.<\/div>\n
You can also use bottled apricots or cooked frozen apricots if you like \"\u263a\ufe0f\"<\/span><\/div>\n<\/div>\n

Sandra\u2019s Apple Shortcake Recipe 1979<\/div>\n<\/div>\n

2 cups Flour<\/div>\n
1 heaped tspn Baking Powder<\/div>\n
125g Butter<\/div>\n
1 egg, beaten<\/div>\n
1\/4 cup Sugar<\/div>\n
Milk (just enough to bind\u2026about 1-2 tablespoons)<\/div>\n
Stewed apples – Granny Smith, Braeburn and Democrat are ideal for this<\/div>\n<\/div>\n
\n
Chuck flour, baking powder and chopped butter into a food processor.<\/div>\n
Blitz it until it resembles breadcrumbs, albeit coarse.<\/div>\n
Add beaten egg and sugar (mix these together before chucking in the processor.)<\/div>\n
And now for the milk.<\/div>\n
Be careful as you pour in the milk; just enough to bind; not flood the mixture.<\/div>\n<\/div>\n

Knead on a lightly floured board until smooth – roll mixture out, cut into two and put one half of the dough evenly over base of a 22cm square tin; coat thickly with stewed apples and top with the other half.<\/div>\n<\/div>\n

Brush over with milk.<\/div>\n<\/div>\n
\n
Bake at 180 degrees for 25-30 minutes.<\/div>\n
Dust icing sugar over the top when warm.<\/div>\n
Lovely hot with custard or whipped cream or served cold as a cake.<\/div>\n<\/div>\n

This recipe can also be doubled and cooked in a Swiss Roll Tin.<\/div>\n<\/div>\n
