APPLE CRUMBLE DESSERT CAKE
125 g butter
1 cup raw sugar
2 eggs
¾ cup non-fat milk
2 cups flour
4 tspns baking powder
Mix flour, sugar, & together and then rub in butter until it resembles bread crumbs.

2 Granny Smith apples 2 Tb raw sugar 50 g butter
½ cup flour
1 tspn baking powder
Preheat oven 180 degrees C.
Place butter and sugar in a pot.
Heat, stirring until butter melts.
Beat eggs and milk together.
Add egg mixture to pot with flour and baking powder.
Mix to combine.
Pour into a 20 cm tin.
Arrange slices of apples on top.
Sprinkle with topping.
Bake 60 minutes. APPLE SCONES
2 cups flour
3 tspns baking powder
½ tspn salt
1 Tb sugar
25 g butter
1 egg
½ cup milk
stewed apple or grated apple
milk & raw sugar for sprinkling over the top
Preheat oven 215 degrees C.
Mix flour, baking powder and salt in a bowl.
Stir in the sugar then cut in the butter.
Beat the egg and mix with almost of the milk to make a stiff dough.
Roll out to form a rectangle about the size of a swiss roll tin.
Place apple over half of the dough and then top with the other half.
Press down lightly and brush with milk and sugar.
Bake for 15 minutes. BLACKBERRY & APPLE TEACAKE
1 ½ cups flour
2 tspns baking powder
3 Tb butter
¾ cup non-fat milk
1 egg
3 sliced, peeled apples
1 ½ cups blackberry jam
3 Tb raw sugar
Preheat oven 200 degrees C.
Rub the butter into the flour and then add baking powder.
Beat the egg in the milk.
Add to the flour and make into a dough.
Pat the dough into a baking dish.
Cover with jam and spread the apple slices on top.
Press the apple gently into the jam.
Sprinke with raw sugar.
Bake 25 minutes.
Lovely with custard or cream. APPLE CAKE MUFFINS
2 cups wholemeal flour
¾ cup raw sugar
4 tspns baking powder
2 tspns mixed spice
1 egg
1 cup stewed apple
¼ cup olive oil
¼ cup non-fat milk
½ cup sultanas
Preheat oven 180 degrees C.
Mix all ingredients until just lightly combined.
Don’t over mix.
Spoon mixture into paper cases in muffin tins.
Bake 20-25 minutes until lightly golden brown.
Cool on a wire rack.
Makes 12.
